Sophie's Cookbook

Our Cooking with Sophie series has been a hit with you, our lovely community. Whether that’s over on the Quince & Cook Instagram or here on our blog feed. With many recipes tried and tested we’ve collated them all into this; Sophie’s Cookbook. One place for you to browse our archive of tasty meal ideas and baking treats.

Taking our love of cooking even further, we recently announced that cooking workshops and classes will be coming to our Princes Street store soon as long as restrictions allow. Keep your eyes peeled on our social media channels for more on this to come.

Grilled Aubergines

“This grilled aubergine recipe is the perfect little taste of the Mediterranean in a side dish. Like many of my favourite recipes, it’s also super easy and quick to make using bits and bobs you most likely already have in the cupboards. However, it’s a recipe that you can get super creative with and add your own spin to.”

Raspberry & Amaretto Tart (Gluten-Free)

“I’m not sure about you, but a sweet treat always goes down well in our household. I gave this raspberry and amaretto torta recipe a bash a few weeks ago and I have to say it was quite the pleaser.”

“I find baking a lot more daunting than cooking. A lot of cooking recipes leave space for a little creativity and ‘happy accidents’ which I am forever grateful for. However, for baking to be successful it relies on a little more precision. What I love about this recipe is that it’s pretty much fool-proof and not that time consuming which is always a plus.”

Butternut Squash & Sweet Potato Soup

“There’s just something so comforting about a nice piping hot bowl of soup, right? Even more so when it’s homemade!”

“Today, I’m sharing the recipe for butternut squash and sweet potato soup. I’m keeping it straightforward but I think adding some spice with chilli flakes or chilli peppers would make for a great taste of sweet and spicy.”

Pasta from Scratch

hand kneading dough with a bag of flour on the table and recipe for pasta from scratch

“I decided to dig out a cookbook from one of my all time favourite chefs, Antonio Carluccio. The cookbook in question features his top pasta dishes but I thought I’d challenge myself and follow his recipe for making pasta from scratch.”

“I’ll be totally honest and say that up until then I had never attempted making my own pasta. However, I was pleasantly surprised at how simple it was to make.”

Savoury Puff Pastry Tarts

“I had to share this recipe for puff pastry tarts with you all as not only is it quick and easy for those late work nights. But, it’s also a huge crowd pleaser with the littles one and grown-ups! In fact, this is our Finlay’s favourite tea!”

“It’s another ‘bung it all together and shove it in the oven’ kind of recipe - my favourite! I’ve gone with Italian-inspired fillings for this one but you could get really creative with flavours. Feta, black pepper and spinach? Or the classic ham and cheese combo? World’s your oyster!”

Beetroot Risotto with Goat’s Cheese & Toasted Walnuts

“Now this is something a little different. Beetroot risotto with goat’s cheese and toasted walnuts;  a recipe I only recently tried out and absolutely loved! Although it sounds like it should be found on the menu for a swanky city restaurant, it’s actually simple to create at home.”

“Not one for the kiddies I’m afraid, as the recipe does include a nice big glass of wine or bubbles. However, it would make a great ‘date night at home’ meal for a lovely romantic evening.”

Baked Veg & Sausage Pasta

“When you’ve got miscellaneous ingredients in the cupboard, not a lot of time and a hungry family to feed. You just need something super easy to make that is equally as delicious.”

“This baked veg and sausage pasta recipe has plenty of scope for you to get creative and tailor to your own tastes. It would also make a fabulous veggie option by simply not adding any sausages.”

Bacon & Almond Butter Dog Treats

open jar of bacon and almond butter dog biscuits

“Ollie is our beloved whippet and for his birthday it seemed only right that I rummaged together a little treat for our top dog on his special day.”

“These bacon and almond butter biscuits are even edible for humans too! The kids absolutely loved them as a snack after helping to make them.”

“As utterly scrumptious as they are, everything in moderation. These are treats for your pups so limit them to one a day and make sure that they’ve got some fresh water nearby to wash it down.”
